  4 1 Seattle Knife Sharpening Service--a.k.a. Bob Tate--sharpens knives for a lot of local professional chefs. He gets rave reviews online on boards like Chowhound.com. He was trained by a guy named Bob Kramer, who is said to be a master bladesmith.   1 0 Epicurean Edge in Kirkland does amazing work! About $2-$3 an inch sharpened by hand and will be sharper than new! Very knowledgeable and friendly staff. They do have some of the big brands but a majority is made by single families and persons in japan.   0 0 I've found myself in the same boat and have not found any services that does what I want. They all tend to use grinding wheels that I loathe to put a $$$ blade against. Eventually I bought my own wet wheel type and now do sharpen them myself. Works great. Having said that, there is a legend circulating "Lesser Seattle" that tells of a person (sometimes an old fellow, sometimes a woman) that has a truck or van or trailer and drivers around sharpening all sorts of things. People swear it's true and that his person magically appears annually and everybody gets their knives sharpend to surgical steel scalpel sharpness. This person has never visited my part of Greenwood/Crown Hill as far as I know or somehow only visits native seattle-ite homes with scandanavian stock and puts a glamour on the rest of us so we don't notice anything. There was a knife sharpening van packed on the sreet outside of my place yesterday (not kidding). I don't remember all the details but I remember it saying on the side of the van that they had over 50 years of sharpening experience.   0 0 I've been taking my knives to Epicurean Edge in Kirkland for years. I've tried several other options including Bob Tate, QFC, Sur la Table. Though I was initially pleased with Bob Tate's sharpening, my knives lost their edges quickly. Maybe the blades were over heated and softened when sharpened? QFC and Sur la Table may have been cheaper, but the edges were TERRIBLE! I don't care how little I paid, if the knife is not well sharpened! Each time I've had my knives sharpened by Epicurean Edge, the knives have come back sharper than when they were new and they have kept their edge for a long time.   0 0 Don't know, but have liked what Sur La Table does for my Wusfhof & Henkel. William Sonoma recommends them.
