Wilton class suggestions

So I'm taking the Wilton basic cake decorating class through a craft store. It's been... interesting. Mostly because I'm a bit bored.

Anyway, next week I have to bring 6 cupcakes and something to fill them with. Any suggestions for cake/filling combos? Strong flavors are a plus since I have to use Wilton frosting (Crisco based, not buttercream). Scratch is fine, but the filling must fit through a 1/4" hole, so nothing too chunky.

    I have no suggestions, but I do have questions - my husband has recently decided to be the family cake guy, and I'm wondering what craft store you're doing this through. What a cool idea.

    What about making something really creative and using a jalapeño jelly base, and mix in some pureed fruit or fruit jam. Strawberries are a pretty awesome pairing with jalapeños, as are apricots and mangos. Make a cornbread cupcake (just use a light cornbread muffin recipe, and maybe sweeten it a bit).

    If you are into cake decorating, Wilton has a series of books called "The Wilton Way of Cake Decorating". They are pretty awesome, if you are into that type of thing, they are worth seeking out. Abebooks online may have them. I know I'm not answering your question here, but thought you may be interested.
