    Pickled beets! Either from a can or some that I've roasted, peeled and lightly pickled myself. With sunflower seeds sprinkled on top.

    Three-bean salad is another good side. Both bean salad and pickled beets have a light vinegar punch, are slightly sweet and don't have any oil, so they counter the richness of the mac & cheese nicely.

    Not really a side dish, but some fried chicken is what you need with your mac n cheese...or a BLT. Anything with bacon in it, really will go great. And a tall glass of beer to wash it down, Newcastle Brown, Mirror Pond, or maybe a Guinness?

    My best friend's grandmother (in PA) would always have stewed tomatoes. He thought this was just a weird Grandma thing, until we saw the two served up together at a Penn State dining hall, FWIW.
