Best food truck in Seattle?

What do you think is the best food truck in Seattle? Extra points if you know of a fantastic one with veggie options.

    A good one that's usually easier to find than Skillet, if not as fancy, is Maximus/Minimus. They are at 2nd and Pike for lunch on weekdays and they have yummy sauces. (Their website says that even with the bun, the veggie sandwiches are 100% vegan.)

    Pretty subjective to personal taste. I skip the foodie options and head for the classic taco truck. Or in this case, the burrito bus. The bus on Rainer in Mt Baker wins hands down, IMO.

    The truck at the bottom of the Jose Rezal bridge that simply says "Mexican Food" on it. Ties with El Quetzal in Beacon Hill for best mexican food I've had so far in Seattle. I usually just get a few tacos, but one time got the skirt steak with rice and beans....it was delicious and more than enough to feed me and the other person I was with, all for under six bucks.

    For veggie options they have a bean burrito that is quite good...

    I'm a huge fan of the Marination Mobile. Hawaiian / Korean fusion cuisine at reasonable prices.

    They also have a couple of pretty good veggie options like Kimchi quesadillas and tofu tacos.

    All these "gourmet" foodie trucks have yet to move me...Meh. Tacos El Asadero on Rainier is the SHIT!! It is everything a food truck is supposed to be, which is: cheap food that is also killer. Go git some tacos and dont forget to put a few bucks in the tip jar...
