What's your favorite meal?

My husband's making mine for me right now, which is what made me think of it. Mine is grilled salmon, rice pilaf, and green beans almondine, with a nice dry sparkling wine. Creme brulee for dessert.

    Braised meat.

    Could be boeuf bourgignonne, could be lamb stew, could be rogan josh, could be carnitas. Something with a cheap cut of gristly meat slow-cooked in liquid until the gristle dissolves and the spices all blend together. Preferably made the day before and reheated. No vegetables required; I love vegetables but on the side, please. Maybe a salad with chopped kale or chard. Maybe some wide egg noodles. (I would kill your grandmother for noodles; another contender here would be Pad See Eew or similar Thai wide, handcut egg noodle dish).

    Good red wine; if we're fantasizing here I'll take a nice Burgundy from one of the lesser regions, a bit more delicate and not so overpowering: a Marsannay, say. (Yes, I've been saving up "Marsannay, say" for a while, do you have a problem with that?)

    Starters: olives, blood sausage and fois gras. Feel free to protest, this is a fantasy meal. Served with a small glass of Suze for an aperitif before the wine.

    Dessert: none. OK, maybe a Werther's Original. What I really want for dessert is cheese. Four kinds, a firm Manchego, some real Parmesan, a gooey Brie, and ending with a deep-veined blue cheese, the stinkier the better. Not Gorgonzola; a Stilton or Roquefort.

    Actually I had something pretty close to this dream meal just the other night at Le Pichet, only it was roast quail instead of the stew, but you can't have everything.

    On the other hand, I remember reading a while back some article where they asked a bunch of celebrity chefs what their death row meal would be, and Rick Bayless, the famous Mexican cookbook writer, said, simply, "beans". I thought at the time he was being ridiculous but I get closer and closer to his point of view every time I eat them. Corn tortillas and refried beans. So, so good, just the essence of "food".

    I love Massamun Curry from Jamjuree, and Maffe, although I haven't found a place in Seattle that serves it. Basically anything involving meat, root vegetables, and peanut sauce that's served over white rice is a-okay by me.

    Homemade chicken curry with mushrooms, carrots, potatoes, broccoli, cauliflower and made with a coconut milk base. Over basmati rice.

    I have two.

    Fried chicken with mashed potatoes and gravy and either broccoli or brussels sprouts with a nice cheese sauce. Parker House rolls. Apple pie or blackberry cobbler for dessert. Lemony iced-tea to drink. (I know, but I'm a Southern boy even after all these years away.)

    I love monkfish piperade with a locally-grown in-season salad and a bit of Roquefort dressing, a cold full-bodied white Bordeaux, and dessert can be either a Gateau Victoire au Chocolat, Mousseline or a Sacher Torte (with apricot filling, not raspberry filling, please) served with Creme Chantilly. Julia Child once said her favorite birthday dinner is a crisp duck and a gooey cake. This is mine.
