    Probably some velveeta like thing. Like it is in the rest of the US. If you even count that as cheese.
    Other than that, we are in tillamook country. So I'd say Tillamook Cheddar. Medium sharp. But it's just a guess.

    Myself, I'm a rogue river oregon blue man. Or oregonzola. The tillamook salted sharp cheddar sold in the small wheel is pretty good and cheap. Beechers is good and local.

    My favorite is that "Champignon" stuff (brie with mushrooms in it -> partytime). But that's just me.

    I know mozzarella is the most popular cheese in America, I'd assume it's the same for Seattle.

    Monterrey Jack does well here, among the non mozz / cheddar cheeses.

    I like Cougar Gold though, among the actual local cheeses loved by seattlites. It's a hard white cheddar wheel...in a can, made by WSU.

    Hope this doesn't sound snarky, but I would doubt anyone except the cheesemakers (Blessed are the cheesemakers...) has really studied this. Maybe ask at a grocery store or something, but even then you'll only get the demographic who shops at that store. Doubtlessly Safeway shoppers eat different cheese than PCC or Metropolitain Mkt customers do.

    I personally enjoy Gouda, Emmantaler, and Jarlsberg the most and Monterrey Jack as the stand-by. But I'll try anything at least twice.

    Well, it's not ricotta, because west of the Hudson all the "Italian" recipes on the web from US housewives tell you to use cottage cheese..or cream cheese!

    Horrifying.
