Where is the best place in Seattle to have your knives sharpened? I've heard good things about Epicurean Edge but they are located on the Eastside.

I agree that sharpening your own knives is an ideal notion, but in my opinion, it's not for everybody (for a few reasons). I strongly second the recommendation for Bob Tate, www.seattleknifesharpening.com/. He does amazing (and fast) work and works with several local UPS stores for easy shipping/pick-up (or you can drop off and pick up at Seattle Restaurant Store up north on Aurora Ave.).

Honing your knives regularly after sharpening is really important, no matter who sharpens them. Seems that the general thinking has shifted from steel to ceramic, so keep an eye out for a ceramic honing rod.

    Seattle Knife Sharpening Service

Bob Tate does amazing work--fast, reasonably priced, and highest-quality. I wouldn't go anywhere else.

I'm a big fan of doing it myself. Buy a kit from Seattle Cutlery or any other cutlery shop and ask them to teach you how to do it. It's a little time consuming but also kinda relaxing. That way you can put a nice edge on your knives while you're watching Letterman or whatever.

I believe that any QFC will sharpen your knives for you (for free! up to three at a time, I think?). The knives have to go away for a day or two (and you feel a little weird carrying them into the store, even wrapped up), but the one on 15th Ave. E. has done a fine job for me in the past. I've also heard good things about Seattle Cutlery in the Pike Place Market. Happy cutting!

I have a woman come do mine, she has a truck and that makes it fast and easy for you. Kitchen Song is the name of her company and here is her contact info: http://seattle.citysearch.com/profile/10777602/seattle_wa/kitchen_song_sharpening.html

And good girl for getting your knives sharpened!

Even though I live on the west side of the water, I've been having my knives sharpened by Epicurean Edge. The edge seems sharper and lasts longer than when I tried anything else. I was pretty pleased with Bob Tate's sharpening as well, but it seemed like the knives lost their edges pretty quickly. As a professional chef, that was a problem.
