    Coffee Works on 1st and Pike, hands down. I don't know of any other owner/manager so driven to train his baristas on latte art, milk texture, &c. as that guy.

    I think it might vary barista to barista, but Vivace downtown by REI has foam art designs printed on their floor... (Vivace has a pretty good Coffee Fest reputation last I heard).

    Caffe Vita Capitol Hill, Caffe Vita Queen Anne, Caffe Vita Fremont, Caffe Vita Seward Park, Caffe Vita Pioneer Square, Caffe Vita Olympia, all have wonderful latte art. The baristas are quite geeky about their coffee as well.

    Vivace has really good latte art, as it's referred to. I like the walk up window on Broadway and Harrison, but there's a cafe on B-way and Mercer, too.
    Stumptown, Herkimer, and Porchlight all have pretty latte art. also.

    Any coffee shop that is enthusiastic about coffee should have baristas that have fun with latte art when business is slow. (i'd hope)

    Trabant is one of these places. There are two locations: U-dist next to the Neptune and in Pioneer Square at 2nd & James. When there are a lot of out of town baristas in Seattle for Coffee Fest they have an informal rosetta-off for bragging rights and funsies.

    Arabica Lounge on Olive Way and Denny Way.

    I've heard that Andrew Milstead is opening a new place in Fremont (called Milstead & Company), and he's a former International Latte Art Champion. Not to mention he has the coffee/espresso skills to back it up, and I'm sure he won't take less from his staff.

    Trabant, any Stumptown and I'm sure I'm forgetting a dozen others who produce great Latte Art.
