What should I do with raspberry liqueur?

My homemade raspberry liqueur that I made from hand-picked berries is now mature and delicious.
Fiddle dee-dee! Whatever shall I do with it?

    Thanks to Washington liquor laws, it's extremely difficult to get decent Creme de Cassis here, so when friends of mine make a Kir or Kir Royale, they often substitute a raspberry sweet wine or liqueur for that critical ingredient.

    You might look up a recipe for those drinks, but you might also need to experiment, since we don't know how sweet your stuff is vs. CdC. Maybe start with a teaspoon of it, then fill the glass with Aligote (Dom. de Prieure has one for $12) for a Kir. For a Kir Royale, use sparkling wine (Silver Cap Brut, for $11) or if you're nuts, a full-blown Champagne. Then add a twist of lemon.

    Pour it over a flourless chocolate cake and eat it. Pour it in champagne and drink it. Heck, do both and have a hell of a night.

    Lots of options! Pour it over ice cream, of course. Or, use it in a champagne cocktail - just a float on top of a glass of champagne. Put a bit in whipped cream to color and flavor it, especially over a warm brownie! Use it in cocktails like you would Chambord. Use in in a reduced sauce w stock and butter - over pork or poultry... Use it as a glaze w butter for chicken... Those are a few ideas! I'm sure it is delish!

    Save some of it to put into Summer Pudding when the berries are back. I use a bunch of fruits when I make this dessert, like cherries, raspberries, strawberries, blackberries and blueberries.

    Traditionally it's made with bread but now I use madeira or pound cake. Pull out some of the juices from the fruits and reduce them, then fortify with your raspberry liqueur.

    You'll find a zillion Summer Pudding recipes online and it freezes well. I made one in July and served it in September. Awesome!

    You could also use it in Cranachan which is a Scottish recipe that uses raspberries. NUM!
