how long does homemade chicken stock last?

I made home made chicken stock last weekend to make soup with... then forgot about it and it sat in the fridge all week. Is it garbage, or can it be the base of tomorrow's soup?

If you bring it to a boil and keep it boiling for several minutes you should be time. Next time try to freeze it before you forget about it! :)

I like to boil mine down to a concentrate and then make stock ice cubes. They reconstitute nicely in 1 cup of boiling water.

smell it. If it smells funny...don't use it, if it smells just a little funny, boil it for a while and smell again...if it doesn't smell funny you're good to go. Also freezing stock (or anything else really) is the best way to have it around, and it takes very little time to go from cube to soup!

I think it should be fine after a week, but I would handle the soup with care, eating all of it the same day or at least freezing the leftovers.
