What should I do with a pound of ground goat meat?

I bought some ground goat meat at the farmers market last weekend- it's hanging out in my freezer right now, but I'd like to do something with it sooner rather than later.

I love gamey meats and cook with venison and moose often- but goat is new to me.

    I heartily second both of these recommendations. I would like to add that fennel (seed and bulb) and orange zest, which are both components of the Greek pork sausage loukaniko, would be wonderful with goat.

    I would make meatballs with Middle-Eastern/Greek spices in tomato sauce. I would top it with a garlicky yoghurt sauce, and serve over couscous.

    That is what I would do with a pound of goat meat.

    Oh yum. Have you ever made sausage? I bet a nice goat sausage would be lovely. But if you haven't, you could easily do something nice with meatballs. I'd tend toward something Greek - goat is often used in Greek cuisine. Maybe mix it all up with lots of garlic, black pepper, marjoram and rosemary, roll it into small meatball shapes, cook those up and serve them like a gyro sandwich with lettuce, tzatziki sauce and onions.

    Or just make goat burgers. Since the meat is going to be strong, stick to a thinner patty, and more mild cheese, but that might be nice.

    I would make Indian koftas. This recipe is presented as an appetzier, http://www.multiculturiosity.com/indian-lamb-cocktail-koftas-chhote-kofte-madhur-jaffreys-indian-cooking-5/  but it works equally well as a main dish with rice or flat bread. I like using goat or lamb with spicy cuisines b/c they have the flavor to hold up to those spices.
