making your own non - beef burgers

what ingredient can I add to my black bean or ground turkey burgers so they are not so soft and mushy? and do I have to fry it? i would prefer grill, broil, or bake.

    I just read on a different site that someone suggest (for black bean burgers) rinsing and drying black beans before mashing, making sure there is little liquid in the mix (squeezing out moisture from any sauteed onions, etc...) using breadcrumbs (more than most recipes) and freezing the burgers and grilling them frozen to help them keep their shape. Worth a try.

    Raw egg added to the raw ground turkey seems to help hold the cooked burger together, but breadcrumbs would also be a good addition.

    I can't say anything about the turkey, but I've never had a black bean burger than wasn't pretty mushy. You could try covering the outside in breadcrumbs (panko or otherwise) to at least get a crisp exterior.

    I definitely always drain my black beans. But check out Dana Slatkin's recipe for Veggie Burgers in one of my posts http://honey-dumplings.blogspot.com/2008/06/summertime-anytime.html she adds a touch of wheat germ or oat bran and this helps!
