Why do cupcakes spread out flat at the top rather than rising like a dome?

    filling the cups with less batter or using all-purpose instead of cake flour (it's all about the gluten!) will give you flat tops. The most reliable way to make flat-top cupcakes, though, is to lower oven temperature by about 25 degrees or bake two trays of cupcakes at once - the lower tray will almost always be more flat than the one above.

    flat cupcakes = more frosting! that's what i'm all about.

    Whiskeypony is on it. Using butter rather than oil can also lead to flat tops, as can over or under mixing. Very sensitive little things!
