What should I do with kimchee?

I keep buying jars of kimchee and pretty much eating all of it with my fingers standing in the kitchen. What are some awesomely excellent ways to cook with it?

    Yay kimchee! As Michael said, Firefly Kimchee is rad. But I also buy all the fresh stuff at Uwajimaya.

    Here's stuff I like to do:
    1) grab an egg or three and mix it with a little water and then do a slow soft scramble (preferably with a little Cholula in there). Top with kimchee (either cold or warmed). Eat constantly.

    2) mix ground beef or a beef-lamb mix with chopped kimchee and red onion. Roll out between Saran wrap with a rolling pin. Cut into tiny squares and grill them up. Cut some taro bread or King's Hawaiian or pan de leche into slider size and toast in same pan. Throw the grilled meat on the bread with some coldish kimchee. Mix some mayo with a little sriracha and throw that on there too, if you want.

    3) throw it in a bloody mary. Yay alcohol and spice!

    Kimchee pancakes (kimchi jeon). I could and would eat those every day until I exploded.

    Oh man, I love kimchi too. Here are a couple favorites;

    Be sure and try Firefly Kimchi, available at several of the Farmer's Markets. They really make a delicious version and it happens to be vegetarian, which is nice for me.

    Take whole leaves of bibb or butter lettuce, or tender romain and wrap them around rice, kimchi, and grilled meat and vegetables like zucchini and green onions. This is another great stand-up way to eat kimchi, because it tastes the best if you eat the grilled stuff right as it comes off the grill. You want to slice the meat and vegetables thin, so the cook quickly. Meats only need a little salt and pepper. Sliced vegetables might need some olive oil, garlic, and salt and pepper.

    Julia and Michael's suggestions are both great, but how about the old classic: ramen.

    Instant ramen becomes a great, quick, meal when you add kimchee and an egg or two. You can also throw in other veggies you have around.

    Try good kimchi chigae (HooSoonYi Edmonds)
    Buy good kimchi (BooHan Edmonds)

    Try a good non-fusion Korean Resturant in Tacoma or Federal Way.
