I got some fantastic chorizo at Rain Shadow Meats (in the Melrose building) a while back.

If you want some serious Mexican stuff, the carniceria on 14th & Jackson has a couple varieties. I think it's made onsite. It comes in long intestinal ropes of deliciousness.
