Got an awesome non-spicy chili recipe?

I'd like to make an amazing chili for my dad. His favorite chili is the stuff at Wendy's, if that provides any kind of baseline. My plan is to blow his mind with the wonder that is homemade chili...but I need a great recipe. Meat would be good, as he is a fan, and not spicy would also be good, as the family is anti-heat except for me. Ideas?

    What is "too hot" for him, seeing as chili powder is not very hot at all?

    My favorite kind of chili takes a "kitchen sink" approach - just throw everything you like into a crock pot and cook for a few hours. Example: saute up ground beef (for easy seasoning, use a "taco seasoning" blend), throw it in with black, pinto, and kidney beans, dump some corn in (and peas if you like), add fresh diced tomato (or a can or two of diced), salt, and a few mild peppers (you do want *some* flavor, right?). The flavors will blend and it will be much better than wendy's chili.
