Good wheel builders in Seattle?

I assume I'm better off going to a local wheel builder than buying something online - is that right, to begin with?

I got my first ultra-light carbon race bike. It's about 18 pounds, while my CX bike is about 30 with rack, panniers, fenders, and such. The carbon bike has Ultegra stuff, which turns out to be very heavy. It also has heavy wheels that are pretty strong, but flex under heavy/strong riders. I'd like to drop a pound in the wheels, and get rid of flex at the same time.

Is that possible? Can I get something that would support me, up to about 240 pounds? Who would you recommend I talk to, in terms of local shops?

( I know that I'm better off losing weight in the rider than the bike, but I think it's even better to do both. Plus, the wheels will never eat too many fries and gain that pound back. )

    I've had two sets of wheels (using Velocity rims) built by Larry Naylor of Perfect Wheels - I wasn't aiming for super light but rather more on the durable side. Larry was easy to work with and the wheels have worked out splendidly - they're about 3 years old now and even the set that I use pretty much every day has only needed minor truing (which Larry did for free). And I like to keep my brake shoes in very close - so I notice even small deviations from complete true-ness.
