Staging (as in interning at a restaurant) in Capitol Hill/ South Seattle/Downtown?

I have been working a prep cook/dishwaser for about six months and want to work my way up. I know enough to do basic prep and some cooking, and know how to not get in the way in a kitchen and the basics of how everything is organized.

Culinary school is not really an option at this point in my life. Several people have reccomended staging to me. I started a stage at a high end vegetarian in north Seattle but stopped because it was too far (a 1.5 hr bus ride each way) and I didn't really feel like I understood the food well enough to be of service.

My ideal stage would be a place like Island Carribean Soul in Columbia City, hearty food but made with a lot of skill and care, and a place where I could learn a lot. I talked to the very friendly owner and he said that they are at capacity with interns so it will be at least a few months before I could start. Anyone had a good experience staging at a similar place in Cap Hill/ South Seattle/ Downtown area?

    My suggestion is to get a job somewhere as a dish/prep person, preferably at a place you enjoy, and work your way up. This is how most cooks get their culinary education. I'll bring up a hardworking dish guy with passion and knowledge of my kitchen before i'll hire some kid fresh out of culinary school anyday.
