What are your favorite canning recipes?

Finally got my mason jars! Now i need some fun recipes! I want to get really crazy with it!

    Along with Robin's suggestion I'd check out foodinjars.com - SO many wonderful, creative, and easy to pull together recipes.

    Congrats Lilmonster206! I'm a BIG fan of Supper easy! Making Jams and then hot packing them is the way to go, it's full proof! I also love doing brined veggies of all types. Those can both be done with the bounty of the fall crops right now so good timing lady!

    I've gotten most of my recipes from Canning for a New Generation. If you've never canned, start with a modern book (i.e. not from the thrift store or your grandma's house, unless it's relatively new) to make sure the recipes have been tested and are up to modern safety standards. After you've done it awhile, you can branch out. I've used online recipes, for example, when I already knew the canning process (I didn't need the recipe to walk me through it) and I understood that the type of recipe made it pretty darn safe automatically (high-acid fruit in syrup).

    I don't mean to sound scary; I only have a little experience and my jars have all turned out fine, but it made me more comfortable to start out with a well-tested book. Canning Across America is good too, though!
