Any recipe ideas for leftover Thanksgiving turkey?

I usually just use it to make sandwiches or enchiladas, but I'd like to try something new.

    Turkey pot pie! Find some frozen pie crusts (the kind in their own pans) at the store (they're probably on sale now and if there are any broken crusts on super-sale, they work too). Thaw two crusts and mend the dough if broken. Put leftover turkey, mashers, stuffing, green bean casserole, etc., into one crust. You can toss in some frozen peas and carrots too. You need gravy, so if you don't have any left over, grab a small carton at the store. pour gravy over the whole mess. I like to also toss some chunks of cream cheese on top. Don't overfill your pan. Now take the other thawed crust out of its pan and stretch it over the top of your pie. Seal it up around the edge and poke a few holes in the top with a fork. Bake at 350 for about 15 minutes or until the juices bubble out of the holes. Bathe your taste buds in savory delight.

    Central Market grocery store had an amazing recipe for pumpkin and turkey chili. It's not listed on their website, but they have this butternut squash turkey chili

    But because I'm all about sharing, I'll type up the "Turkey and Pumpkin Chili" Serves 4-6
    1 Tbsp olive oil
    1 medium onion, chopped
    2 cloves garlic, minced
    1 diced Anaheim or pasilla chile
    1.5 tsp each oregano, cumin, and chili powder
    1 tsp salt
    0.5 tsp pepper
    4 cups chicken broth
    2 (15 oz) cans white beans
    1 (16 ounce) can solid pack pumpkin
    2.5 cups chopped cooked turkey

    In a large soup pot over med-high heat, add oil and saute onion until tender (about 5 min). Add garlic and saute until fragrant (about 2 min). Add remaining ingredients. Simmer for 30 minutes to blend flavors.

    I haven't eaten it yet, but it smelled AMAZING while they were cooking it yesterday.

    You could chunk it up and mix it up to make fahita quesedeas... or just turkey tacos... etc. Not very glamorous, but an unusual usage of turkey meat when shreaded or chopped fine enough...
