Where can one find the best bacon in Seattle?

It's time, once again, for the Stranger's annual Breakfast & Brunch guide! We want to include some of Seattle's favorite breakfast places in the guide, so we're turning to the Questionland community for suggestions. So, which local restaurant serves the best bacon? And what makes it so great?

    I'm a HUGE fan of B&O Espresso's bacon, I should really ask where they get it next time. It's ecstasy.

    I like Skillet's bacon.

    It is from the jowls of the pig and tastes different from "normal" bacon. It is lighter in texture and doesn't obliterate every single other taste with bacon-y goodness.

    I've seen people send it back because it's not at all what they had in mind when they ordered bacon.

    For variety, don't forget the steakon (beef bacon) at Stopsky's. Not exactly Seattle, but close and tasty.
