I would recommend trying out cider or mead brewing. It's really simple - just a few ingredients and you can get great results with some organic unfiltered apple juice or fancy honey from any PCC/Whole Foods kind of joint. Farmer's markets, too.You can get drinkable results with apple juice concentrate, even.
It will give you an alcohol closer to wine than beer, and you can really experiment with getting carbonation or not, sweetness, and added flavorings.
