    Alright, I have first hand experience with this so:

    All Front of House restaurant positions tend to deal in cash tips (20-70% of your pay)
    Construction day(temp) labor. This would include landscaping, framing, digging, and other activities that gaurantee a great nights sleep.
    Selling controlled substances, if you can stomach this fun and exciting field.
    Babysitting. The pay is weak, but if you like kids and tax-free income.
    Stealing and hawking your loot. This pays cash, but is morally reprehensible and will likely land you in jail sooner rather than later.
    Looking closely on craigslist jobs for jobs that pay cash in many different fields. Typically, these will be temporary, hence easier to pay under the table. Many are ligitish. Just make sure that you will be working in a public sitution and or with many people. This will decrease the likelyhood you will put yourself in a dangereous situation.

    And to the post at the bottom of these responses: Many jobs pay cash for many different reasons. Often the reason to pay cash is to avoid the high costs to both employers and employees of government mandated taxes, insurance, and fees which increase the costs of doing business. If employers, clients, and employees trust each other and act in good faith, cash can move freely and every one is very happy without the added costs. With government interference and sue happy society, costs sky-rocket, profits dwindle, and employees see their check being much less than their actual wage.
