Awesome - thanks for the tip on taru sake. I just went to Sake Nomi - great place. I'll have to ask about the taru next tmie I'm in.

Thanks for these contacts Julia. I just looked them up and hope to meet or talk with at least one of them soon.
Oh how I love the craziness at Uwajimaya, and I did check there before posting this question. Their cupware selection was pretty low (holidays, sigh) and I couldn't find any staff to help with my dilemma. I'll check in with the local experts you recommend. Thanks!

Thanks for pointing me to Sake Nomi - looks like a great place and I'd happily check out the pottery there.

Thanks for your suggestion. I'll see if I can find and sample the Gekkeikan.

Sake recommendation for dedicated wine drinkers?

  • Where is the best place in Seattle to have your knives sharpened? I've heard good things about Epicurean Edge but they are located on the Eastside.

I agree that sharpening your own knives is an ideal notion, but in my opinion, it's not for everybody (for a few reasons). I strongly second the recommendation for Bob Tate, www.seattleknifesharpening.com/. He does amazing (and fast) work and works with several local UPS stores for easy shipping/pick-up (or you can drop off and pick up at Seattle Restaurant Store up north on Aurora Ave.).

Honing your knives regularly after sharpening is really important, no matter who sharpens them. Seems that the general thinking has shifted from steel to ceramic, so keep an eye out for a ceramic honing rod.
