  • Which cheeses freeze well?

    Personally I would never freeze any cheese, but if you have to, then stick with harder, aged cheeses like Parmesean, Gruyere, aged Alpine styles, etc.

    Never freeze brie, or any other soft cheeses. I've never done it myself, but the thought alone makes me cringe.

  • What local organic produce delivery service do your recommend?

    I've been using New Roots Organics for about 3 years now and I love them!

    They deliver a bin to your front door every two weeks full of organic, and local (if it's in season) fruit and produce. When you set up your account you can select things that you never want, things you will always want, etc. You can also sub items in each individual bin, or simply add on items if you like. It's a really great value at $35 for a standard bin, which had my husband and I eating tons of great fresh fruit and veg for two weeks. The personal bin is $25 I think.

    Seriously? My kitchen. I can't stand anyone's posole but my own, which is really my dad's recipe, and I gotta say that this year's first batch using stew pork from Rain Shadow Meats was ethereal. I'll let you know when I make another 5 gallons of it ;)

    I always love whatever the Hopvine is serving, their soups are satisfying and something different, like corn chowder full of fennel and fresh dill.

    I also could pretty much live on the sweet & sour soup at 7 Star Pepper, I'm starting to salivate thinking about it now.

  • Best places to dine out alone?

    You've GOT to hit the Corson building! Friday or Saturday night, depending on how lavish you want to be, you can dine family style at one of the best restaurants in this city, and the best part is that since it is family style you'll be surrounded by people who love and appreciate food just as much as you, so you won't be dining alone at all :)

    I also totally agree with the recommendation to dine at the bar/counter of any great restaurant. Crush is a wonderful place to do this, you'll have great conversation with the bartender and a front row seat to the ongoings of their luxurious kitchen staff.

  • Advice on how to make the most delicious grilled cheese sandwich on the planet?

    In general, here are a few rules of thumb to follow for great grilled cheese:

    1. always shred your cheese, this helps it melt quickly and evenly, you'll wind up with a lot less burnt bread.

    2. use a heavy pan, like a cast iron skillet and make sure it's heated up thoroughly

    3. butter the bread rather than melting it in the pan, this will also prevent the bread from burning

    As far as cheese goes, classics like a good aged Gruyere or cheddar are always delicious, but it's also a lot of fun to throw in some unexpected tidbits in there like an aged goat, a little ooey gooey washed rind, or a little blue.

    I have to admit that in the flurry of opening the shop this year, I haven't gotten to nearly as many restaurants as I'd like. That being said, I've gotta give massive props to Toulouse Petit. Their menu is beyond vast and everything I've tried has been sublime.

    I've been to brunch there more than anything else, and it is always amazing - they basically get everything right, which is not an easy feat in Seattle - their potatoes are just as scrumptious as their hollandaise or the perfect sear on a sliver of sirloin for steak and eggs. You gotta respect not letting anything go by the wayside. I am also a sucker for real grits at brunch, and they've got 'em in spades, covered with paprika shrimp and a fried egg, NOMS!

  • Best burger?

    I agree with both Smith and Quinn's - both always cooked to perfection, local & sustainably raised meat, perfect fries, yessir.

    My other tride and true fave is the green chile cheeseburger at Red Mill. Fellow southwest transplants out there will appreciate the fact that they roast their green chile fresh every day. I'm salivating like crazy just typing this.

    The other one is not my own, but that of a good friend whose culinary opinion I respect deeply. She swears by the burger at Baranoff in Greenwood, but honestly I'm a little afraid to try it.

  • What is the best dim sum in Seattle?

    I've tried quite a few, and I always keep going back to House of Hong. They have a very wide variety, everything is piping hot and fresh, not just reheated. They make a crispy fried beef and garlic dumpling thing that I can't get enough of.
