    what about El Mestizo? It's just a bit further south along Broadway (@James St. I think, with its own parking). It has a great range of vegetarian options, they have some comfortable standards as well as more adventurous dishes. And it's really delicious.

    I agree about using heart and would also add tongue. They are very lean meats and aren't as extreme texturally (in my opinion) and are a bit more forgiving when cooking and still turning out delicious. The 'Nose to Tail' and 'Cottage River Meat Book' that lonelocust mentioned are great resources for offal.

    I'd also suggest being offal adventurous when you go out to eat; offal cuts are appearing more and more in restaurants and you can start to get a better understanding of what these cuts can be like and things you might try out at home. I know it goes a bit against the economic argument, but even just one amazing experience out with some tasty sweetbreads/tripe/heart/liver/etc can really boost your motivation for your own cooking attempts.

    when they have them, sweetbreads (@Cafe Juanita) and tripe (@Spinasse) are two of my favorites...

    For the jazz, you could catch a set at Jazz Alley downtown; there's typically two sets a night, they serve dinner before and during the first set should you be so inclined (the food's sort of 'nice hotel dining room'). Or you could have dinner elsewhere (Serious Pie maybe?) and show up for the later set.

    There's also live jazz down at the New Orleans Restaurant in Pioneer Sq. They serve southern/creole food (I haven't ever eaten there, but the few times I've been in it smelled pretty good) and have live music from 7-10 or 8-11 or so.

    China is on the ocean and so seafood plays a significant part in Chinese cuisine, particularly Cantonese food. Local crab is often prized among seafood in Chinese cuisine (I keep saying Chinese because that's my familial familiarity, but Thai, Vietnamese etc I'm sure are similar) and we are fortunate that our local crab is Dungeness (so flavorful!!).

    And the fresher the better, so those who are able to go crabbing do.

    "Authentic" is such a tricky word.

    My go-to recommendation for Italian food in Seattle is Spinasse (14th & Pine). Their food is specific to the Piedmont region of Italy; or really, it takes dishes from that region but updates/localizes it with seasonal ingredients. Does that un-authenticate it...?
    Regardless of what one might consider authentic, they have received some serious national accolades (Food & Wine, Bon Appetit) and have been reviewed favorably in comparison to restaurants in Piedmont (Art of Eating).

    Their tajarin pasta in particular is incredible.

    sipping fancy cocktails? Diamond or Cloud 9

    debaucherous dancing? Celebrities or maybe The Waldorf

    straight up clubbing? Fortune Sound Club

    dancing and maybe live music? The Biltmore

    there's loads of clubs on Granville (Caprice, Republic, Ginger 62...) in Gastown (Shine, Fabric, Lamplighter...) and in Yaletown (Barcode, Library Square...) it's just been a lil bit since I went to any of them.

    I was just in there today trying to get to the bus tunnel; the entire basement level is blocked off and gutted (sign said in preparation for Nordstrom Rack, just as you say).

    I feel similarly; I was just trying to see what the facts were behind the "bike & bus" positive spin they've started advertising with.

    My guess was that portions of the Waterfront renovation maybe included bus service and bike lanes that they were taking credit for as being part of their proposal.
    Wow. How has such blatant lying by the Move Forward people not been more widely publicized? It's such a gross misrepresentation.
