I suggest visiting a farmers' market and trying meat from different farms before ordering a side. You'll find different flavors, and textures, and can pick the one you like best. All the small farmers can arrange for a quarter, half or whole steer.
I've been buying mine from Olsen Farms for a few years--we split a half among several households, since a half is about 225 pounds of beef. They do custom wrapping, so you can make specific requests about how thick you want the steaks, and if you want soup bones, suet or organ meats. The total price per pound is in the neighborhood of $6, which works out to a good deal--pricey for burger, cheap as hell for porterhouse steaks and tenderloins.
Olsen also does lamb--it's mild and delicious--and just got into pork also, but he's building his herd up before selling whole pigs. Skagit River Ranch's pork is fantastic, but I'm not wild about the flavors in the beef.
